- Prepare the dressing by adding the apple cider vinegar, olive oil, Dijon mustard, and salt to a small glass jar or bowl. Shake or whisk well until the dressing is fully combined.
- In a large mixing bowl, combine the green cabbage, red cabbage, shredded carrot, and sweet peppers. Toss everything together until the vegetables are evenly mixed.
- Pour the dressing over the salad and gently toss with tongs or two forks until all the vegetables are lightly coated.
- Taste the salad and adjust the salt if needed. For the best flavor and texture, refrigerate the salad for about 20–30 minutes before serving so the cabbage can absorb the dressing slightly while still staying crisp.
