  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • Pinch of salt
For The Dubai Chocolate Filling
  • 1 cup kataifi pastry finely chopped
  • 2 tablespoons butter
  • 1/2 cup pistachio cream
  • 1/3 cup tahini optional but authentic
  • 1 cup milk chocolate melted
  • 1/2 cup dark chocolate melted
For Garnish
  • Crushed pistachios
  • Melted chocolate drizzle
  • Extra pistachio cream
  • Powdered sugar

Method

Step 1: Make The Crepe Batter
  1. In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth.
  2. Let the batter rest for 20–30 minutes.
Step 2: Toast The Kataifi
  1. Melt butter in a skillet over medium heat.
  2. Add the chopped kataifi pastry and cook until golden brown and crispy, stirring frequently.
  3. Remove from heat and let cool slightly.
Step 3: Prepare The Filling
  1. In a bowl, combine the toasted kataifi, pistachio cream, and tahini until evenly mixed.
Step 4: Cook The Crepes
  1. Heat a lightly greased nonstick pan over medium heat.
  2. Pour a small amount of batter into the pan and swirl quickly to create a thin crepe.
  3. Cook for about 1 minute on the first side and 20–30 seconds on the second side.
  4. Repeat with remaining batter.
Step 5: Assemble The Crepes
  1. Spread melted chocolate over each crepe.
  2. Add the pistachio kataifi filling.
  3. Fold or roll the crepes.
  4. Drizzle with extra chocolate and pistachio cream.
  5. Top with crushed pistachios and serve immediately.

Notes

  • Resting the batter helps create softer crepes.
  • Use a mix of milk and dark chocolate for better flavor balance.
  • Toast the kataifi carefully because it browns quickly.
  • Best served fresh while the kataifi stays crispy.
