  • ½ cup finely chopped pistachios
  • ¾ cup chopped Turkish delight
  • 2 tablespoons cornstarch

Method
 

Prepare The Dry Ingredients
  1. In a medium bowl, whisk together the flour, baking powder, salt, and cornstarch.
Cream Butter And Sugar
  1. In a large mixing bowl, beat the butter and sugar until light and fluffy, about 2–3 minutes.
Add Wet Ingredients
  1. Mix in the egg, vanilla extract, and rosewater until smooth.
Fold In Pistachios And Turkish Delight
  1. Gently fold the chopped pistachios and diced Turkish delight into the dough. Lightly coating the Turkish delight with flour first helps reduce sticking.
Chill The Dough
  1. Cover the dough and refrigerate for at least 45 minutes.
Bake
  1. Preheat oven to 350°F. Scoop dough onto parchment-lined baking sheets and bake for 11–13 minutes or until the edges are lightly golden.
Cool And Garnish
  1. Allow cookies to cool for about 10 minutes before transferring to a cooling rack. Dust with powdered sugar or garnish as desired.
