Ingredients
  

For The Whipped Feta
  • 8 oz feta cheese
  • 1/3 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 small garlic clove
  • 1 tsp lemon juice
  • black pepper to taste
For The Toast
  • 4 slices sourdough bread
  • 1/2 cup lutenitsa
  • olive oil for brushing
  • chopped parsley or dill
  • chili flakes optional
  • cucumber ribbons or microgreens optional

Method
 

  1. Add the feta, Greek yogurt, olive oil, garlic, lemon juice, and black pepper to a food processor. Blend until smooth and creamy.
  2. Brush the bread lightly with olive oil and toast until golden and crispy using a skillet, oven, toaster oven, or air fryer.
  3. Spread a generous layer of whipped feta over each slice of toasted bread. Spoon lutenitsa on top without fully mixing the layers.
  4. Finish with chopped herbs, chili flakes, cucumber ribbons, microgreens, or an extra drizzle of olive oil. Serve immediately while the toast is still crispy.

Notes

  • Use block feta in brine for the smoothest whipped texture.
  • Homemade lutenitsa adds deeper roasted pepper flavor.
  • Toast the bread well to prevent sogginess.
