Method
- Spread ajvar evenly on one side of each bread slice.
- Add mozzarella and cheddar or kashkaval cheese over the ajvar.
- Close the sandwiches and butter the outside of the bread lightly.
- Heat a skillet over medium-low heat.
- Cook sandwiches for 3–4 minutes per side until deeply golden and crispy while the cheese melts completely.
- Slice and serve immediately with parsley or chili flakes if desired.
Notes
- Use thick bread for the crispiest texture.
- Medium-low heat prevents burning before the cheese melts.
- Spicy ajvar adds extra Balkan flavor.
- Kashkaval cheese creates an especially authentic Balkan-style grilled cheese.
