Ingredients
  

  • 4 slices sourdough or rustic bread
  • 4 tbsp ajvar
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar or kashkaval cheese
  • 2 tbsp butter or olive oil
  • Optional chopped parsley
  • Optional chili flakes

Method
 

  1. Spread ajvar evenly on one side of each bread slice.
  2. Add mozzarella and cheddar or kashkaval cheese over the ajvar.
  3. Close the sandwiches and butter the outside of the bread lightly.
  4. Heat a skillet over medium-low heat.
  5. Cook sandwiches for 3–4 minutes per side until deeply golden and crispy while the cheese melts completely.
  6. Slice and serve immediately with parsley or chili flakes if desired.

Notes

  • Use thick bread for the crispiest texture.
  • Medium-low heat prevents burning before the cheese melts.
  • Spicy ajvar adds extra Balkan flavor.
  • Kashkaval cheese creates an especially authentic Balkan-style grilled cheese.
