- In a small bowl, whisk together the olive oil, lemon juice, vinegar, mustard, garlic, oregano, salt, and black pepper until fully combined.
- Let the dressing rest for a few minutes while preparing the vegetables.
- Chop the tomatoes into bite-sized pieces and slice the cucumber and red onion.
- Add the tomatoes, cucumber, onion, olives, and feta cheese to a large serving bowl.

Notes
If you do not have feta cheese or Greek feta you can use cottage cheese or any feta you have. Bulgarian feta is a great alternative.

- Bulgarian sirene cheese can be used instead of feta for a delicious Balkan variation.
