Healthy Oat and Yogurt Pancakes

Ingredients
  

  • 2 cup gluten free rolled oats
  • ½ tsp baking powder
  • ½ tsp vanilla
  • 1 egg
  • cup banana (medium size and ripe)
  • cup blueberries (fresh or frozen)
  • 5.3 oz yogurt
  • coconut oil

Equipment

  • KitchenAid® K400 Blender
  • Medium size pan
  • Rubber spatula

Method
 

  1. We blend all ingredients using a blender until very smooth.
  2. Heat a pan with about 1 tablespoon of coconut oil.
  3. Pour a small amount of the ready mixture from the blender into the pan.
  4. Cook for about 4-5mins from the first side and then another 203 mins from the other side.
  5. Enjoy!

Notes

Any yogurt could work. I personally love Bulgarian yogurt but you can use Greek yogurt as well.
