Ingredients
  

  • 1 cup rolled oats
  • ¾ cup plain Greek yogurt
  • 2 eggs
  • ¼ cup milk
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • Butter or oil for cooking

Method
 

  1. Add the rolled oats to a blender and pulse until they resemble coarse flour.
  2. Add the Greek yogurt, eggs, milk, honey, vanilla extract, baking powder, cinnamon, and salt.
  3. Blend until the batter becomes mostly smooth.
  4. Let the batter rest for about 5 minutes so the oats can absorb moisture.
  5. Heat a lightly greased nonstick skillet or griddle over medium heat.
  6. Pour small portions of batter onto the skillet.
  7. Cook until bubbles begin forming on top and the edges start setting.
  8. Flip carefully and cook the second side until golden brown and cooked through.
  9. Serve warm with your favorite toppings like berries, yogurt, honey, maple syrup, or nut butter.

  • Add a splash of milk if the batter thickens too much while resting.
